The cup is not one size
A genuine pitfall in cooking conversion is that a cup is not a fixed international unit — the US cup, the metric cup and the old imperial cup differ, and tablespoons vary too, most notably the Australian tablespoon being larger. For liquids these differences are usually small enough to forgive, but for baking, where precision matters more, they can matter. Where a recipe is fussy, converting to weight in grams sidesteps the whole cup ambiguity, which is why serious baking recipes increasingly give weights.
