Fan ovens run hotter
One extra wrinkle catches people out: a fan or convection oven circulates hot air and so cooks more efficiently, meaning it effectively runs hotter than a conventional oven at the same dial setting. The usual rule of thumb is to drop the temperature by around twenty degrees Celsius, or shorten the time, when a recipe written for a conventional oven is cooked in a fan one. So beyond converting the units, it is worth knowing which kind of oven a recipe assumes, or your bake may brown faster than expected.

What is a gas mark?
An older British scale for gas ovens where each mark corresponds to a temperature — gas mark 4 is a moderate oven, around 180 Celsius.
Do I adjust for a fan oven?
Yes — a fan oven runs effectively hotter, so drop the temperature by around 20 Celsius, or shorten the time, versus a conventional oven.
