Grab versus extract to a file

If you want the whole document's text saved as a file to keep or process, extracting to plain text is the better fit. This is the quicker, lighter version for when you just need to copy some words and move on. Either way, it only works on PDFs that hold real text — a scanned image of a page has none to grab, and would need OCR to read the letters from the picture instead.

How to grab text from a PDF

Copy what the PDF won't let you
