What doesn't scale linearly

Ingredient quantities scale cleanly, but a few things do not, which is worth knowing so a scaled recipe still works. Cooking times and pan sizes do not simply double — a larger quantity in a bigger dish may need longer or a different temperature, and a doubled cake will not bake right in the same tin. Strong seasonings like salt, spices and raising agents sometimes need a slightly lighter hand than a straight scaling, and very small measures round awkwardly.
